Noodles

Thin noodles for Tonkotsu ramen

Our specially formulated thin noodles, perfected over decades, offer a unique combination of firmness and chewiness. The precise blend of wheat flours and the addition of egg whites contribute to the noodle's robust texture.

Medium-thick noodles for Dipping noodle

Our noodles are made using a special "Gyaku-giri" technique, resulting in a thicker noodle that can better hold the rich, flavorful dipping sauce. The firm texture and chewy bite offer a satisfying and substantial eating experience.

Kakuniku - Stewed pork belly

Our "Kakuniku" is a heritage recipe passed down from a master of Nagasaki Shippoku cuisine. It's made by slowly braising pork belly until tender, then removing excess fat.

Mentaiko - Spicy Cod roe

Our mentaiko is specially made for us by a Kyushu seafood processing company. It's carefully kneaded and finished so it won't dissolve in the broth too quickly, allowing it to coat the noodles perfectly.

Ajitamago - Seasoned soft-boiled eggs

A perfectly cooked soft-boiled egg, marinated in our house-made soy sauce for a rich and savory flavor. The creamy yolk adds a delightful richness to your last bite.
